Winemaking:

The production of this wine takes 7 years. It starts in large wooden vats. Maturation then takes place in large glass containers called Demijohns which are placed on terraces and exposed to the natural climate. After the first 3 years the wine is then transferred to oak barrels where it remains for three to four years until bottling.

Winery Info:

This charming old winery is located in the small, thriving market town of Corella, specializes in the production of Moscatel, and makes some of the finest examples to be found in Spain, using the delicate fine-grain Moscatel (Muscat Blanc à Petits Grains) grown on its family owned 42 hectares. Founded in 1856 by Don Camilo Castilla y Alzugaray, this is the oldest winery in Navarra and, oddly but most appealingly, was built in a distinctly Andalusian style – in white, hacienda-style, with a myriad of charming sun-lit patios; and truly it is an Aladdin's cave of light, sweet wines. Wine production is the realm of laid-back but perfectionist Ladislao Montiel (Ladis), who is one of Spain’s master craftsmen of dessert wines.

Vineyard information:

The richness of Corella has always been linked to water olive oil and wine. The vineyards are at an average of 370m. above sea level. Its climate means it is often referred to as the Nacarran Adalucia. Soils are rich in calcerous clay. It has a unique microclimate with very cold winters and very hot summers which contribute to the growth of the vines and the flavour development of the fruit. The Capricho de Goya (Goyas Whim) is made with fruit from the Tambarria vineyards. It was first made in 1997 to commemorate the 250th anniversary fo the birth of Goya.

Food Pairing:

With a reasonably light and fruity style this is a versatile dessert wine which would suit a range of postres including cakes sponges buiscuit based puddings tarts and cheesecakes. It will also partner mild and creamy cheeses and rich sweet fruits. Slightly chilled it is also very enjoyable as an alternative after dinner digestif.
